Red Kidney Bean Curry

My kids really don't care for beans, and my husband, well, he doesn't think a meal is complete unless there's meat. So a dish like this recipe, from the Smitten Kitchen, doesn't work as a family meal, but that doesn't stop me from making it for myself for lunch!

I made half a recipe and have been enjoying it for several days now. Add some coconut milk for added creaminess or to tame the heat -- although you can eliminate the heat by skipping the chili and cayenne.

Andrea, I have a couple questions on meals I've made recently.

1. Beef and noodles. When I cooked the noodles in with the beef mixture they completely shredded. Did you have this problem?

2. The scalloped potatoes and ham were awesome tasting, but really runny/liquidy. Did you run in to this?

I was going to make the chicken coated with corn flakes. The Kelloggs brand says it contains traces of soybeans. What brand of cornflakes did you use? I'd like to try making it.

Oh, and I figured out how to make frosting using powdered sugar, rice milk, and unsalted fleischmans. It doesn't taste too bad Any other frosting recipes you might have?

I am a brand new mom to a 1 month old baby girl, and after some scary, bloody stools, we found out she has MSPI. I am on the special MSPI diet, so that I can return to breastfeeding. I love that you started this blog and appreciate the time and effort you put into it. It hasn't been easy giving up many foods I love, but I know I'm not alone and am determined to do it! Skaczmarek: Let's see if I can help you ... One thing I've found when cooking noodles in a soup or stew, the noodles will disintegrate while cooling down because they suck up so much liquid. One way to avoid this is to cook the noodles seperately and portion them into individual bowls. Once all the leftovers have cooled down, you can mix them together for storage. ... On the scalloped potatoes, you might try making a thicker roux by adding more flour. ... I just used a storebrand corn flakes. ... And finally, there are few different frosting recipes on the site. Just click on Desserts. The Kahlua frosting is especially good! :)
