As I've mentioned before, I am not a fan of coconut flakes, but it doesn't mean this blog has to be a coconut-free zone!
MSPI Mama-reader Nell recommended this recipe from Baker's. She made the chocolate-dipped version with MSPI-friendly chocolate and said they tasted just like Mounds candy bars.
How did you read my mind?? I've been craving coconut macaroons, I usually eat them with mango sorbet and it is soo good! Thanks for posting this recipe, I will try them out tonight! =) BTW the chocolate cake recipe & kahulua icing recipe you posted have been huge hits around my family!! (Have you ever posted a phad thai recipe, because I found a good one!)
Sorry to hear that JD still has soy issues. I am 2 months from re- introducing some milk products to see how he tolerates it. Need to do some research & talk with pediatrician on a safe way to do this. You should try substituting the tofu for chicken in the pad thai, my husband likes it better that way anyway. :)
