Kahlua Chocolate Icing

I made the Eggless Chocolate Cake recipe (posted 3/22/08) over the weekend, but instead of using the icing that the recipe calls for, I used this recipe that my mom gave me. It was super decadent and so yummy! In case you're concerned about the alcohol in the Kahlua, don't worry, it boils off.

Kahlua Chocolate Icing

2 tbsp. MSPI-friendly margarine
2 tbsp. cocoa
2 tbsp. Kahlua
2 tbsp. rice milk
1 cup powdered sugar
1/4 tsp. vanilla extract

Mix the first four ingredients and bring to a boil, whisking constantly. Remove from the heat, add the sugar and vanilla, stirring until smooth. Drizzle over prepared cake.

this sounds great and we have Kahlua in the pantry! what kind of margarine do you use? we found that the Fleishmans unsalted is ok, but wondered if there is another we could use as we can't find it everywhere.

Fleischmann's Unsalted is the only stick maragarine I know of that's OK, and yes, it's hard to find. Count yourself lucky that you can find it at all! There are a few tub margarines that are OK, but I wouldn't recommend them for cooking or baking.
