White Cake

Here's another recipe from Laura. No substitutions needed!

White Cake

3 cups flour
1½ cups sugar
2 tsp. baking soda
2 tsp. baking powder
½ tsp. salt
½ cup. plus 2 tbsp. canola oil
1 tbsp. vanilla
2 cups warm water

Preheat oven to 350 degrees. Combine dry ingredients. Add remaining ingredients. Beat until smooth. Pour into two ungreased 9-inch cake pans. Bake 30-35 minutes. Cool on rack. Frost with desired frosting.

*** One-half of this recipe makes 12 cupcakes.

Thanks for all these recipes! I used this one to make cupcakes for a holiday potluck. I topped them with frosting and crushed candy canes and they were a hit even with the non-vegans. I'm so glad to find a resource now that my diet is suddenly restricted.

Hi, could you use almond or coconut flour and still get a nice texture with this recipe?

From what I know of those flours, I very much doubt you could use them and get similar results. Sorry. You'd be better off googling a recipe for a gluten free vegan cake, or something similar to that.
