Spicy Tomato Soup

Don't let the "spicy" adjective scare you away from this tasty soup. It's not "spicy" hot, just flavorful. The recipe is slightly adapted from "The Moosewood Cookbook."

Spicy Tomato Soup

2 tbsp. olive oil
1-1/2 cup onion, minced
3-4 garlic cloves, minced
1/2 tsp. salt
1 tsp. dill
ground pepper
1 1-lb., 12-oz. can crushed tomatoes
2 cups water
1 tbsp. honey (opt.)
2 medium tomatoes, diced

Heat olive oil (and butter) in pot. Add onion, garlic, salt, dill and pepper. Stir over medium heat for about 5 to 8 minutes until onions are translucent.

Add canned tomatoes, water and honey. Cover and simmer over low heat for 20-30 minutes.

About 5 minutes before serving, stir in tomatoes.
