Chicken Tortilla Soup

The potluck I went to the other night included a contest for the best soup recipe. The winning recipe was this one. Very yummy! The gal that brought it (my friend Laura's sister, Lisa) has a son who is allergic to milk, so she cooks dairy-free, too!

Chicken Tortilla Soup

1 lb. shredded, cooked chicken
1 (15 oz.) can whole peeled tomatoes, mashed
1 (10 oz.) can enchilada sauce (Lisa uses the mild.)
1 medium onion, chopped
1 (4 oz.) can chopped green chile peppers
2 cloves garlic, minced
1 (14.5 oz.) chicken broth
1 tsp. cumin
1 tsp. chili powder
1 tsp. salt
1/4 tsp. black pepper
1 (10 oz.) package of frozen corn
1 tsp. chopped cilantro
1 pkg. corn chips

Place chicken, tomatoes, enchilada sauce, onion, green
chilies and garlic into a crockpot. Pour in chicken
broth. Season with spices. Stir in corn and
cilantro. Cover and cook on low for 6 to 8 hours or on
high for 3-4 hours. Crumble corn chips on top of soup
when serving.

OK. I was blown away to see this blogger. I have a 19mth old MSPI baby. I was searching google for ways to start weaning her and getting her on her own diet when I found this sight. I too learned from scratch about MSPI. What is really weird is I am too in Omaha and used to go to Brookside last year but have been going to Westside since March. I would love to chat more about going to solids with you. It is interesting waters to navigate and maybe you could help me and I you. Thank you for your sight!

I'm so glad this site has been helpful for you. I'm planning to wean JD in about six weeks when he turns 1, barring any major reactions. Hopefully things will go smoothly!

Best.Soup.Ever. I live in NM, so I'm pretty picky about Mexican food (although because of the green chile, this would be New Mexican food....). This was so good I made it twice in two weeks - the second time I doubled the recipe and it was still gone in 3 days. Can't wait to try some other recipes...
